Ingredients
1-1/2 cups apple juice
1-1/4 cups instant rice
1/8 teaspoon salt
Dash of cinnamon
Dash of nutmeg
1/3 cup chopped celery
2/3 cup chopped unpeeled apple
1/4 cup chopped walnuts
3 Tablespoons low-fat yogurt

Directions
1 In medium saucepan, bring juice to a boil.
2 Stir in rice, salt, cinnamon, and nutmeg.
3 Cover, remove from heat and chill.
4 Stir in celery, apple, walnuts, and yogurt.
